Should I get founders or deluxe editions?

February 6 is the early access; official release is February 11.

ah thanks. the European steam clock must be set at Spanish time or further west, I was looking at steam late yesterday evening and it said this game plans to unlock in 9 days, so I thought the early access was the 5th, but I guess in parts of Europe it was already today.

I'd argue that encouraging the game to sell 4 civ and 2 leaders for more than 30 bucks isn't the only and healthier way to support the game
It's still the best way to support the game:

1. The DLC cost is still $5 per DLC, plus packs have a lot of things on top of those DLC. And now what we know each civ comes with it's own wonder, the packs are surely not smaller than before.

2. I don't know exact Civ7 economics, but it's pretty common for base game to be unprofitable and only with DLC it covers the expenses on salaries, marketing, etc. It's a pretty common situation on competitive markets, for example online shops usually pay for getting a customer more than they get from the customer's first purchase and only on second or third purchase they actually get some profit.
