The Force should go back to sleep permanently

Headcanon is basically how I do everything as there really isn't much more to being a consumer of art. If an author (in the Barthes/Foucault sense of the word) releases a text that I feel is not only bad, but actively harmful to narratively or thematically connected prior texts, I simply toss out the new text and act as though it never happened. I decided a couple years ago to operate as though the prequel films never happened and I've never looked back since.

There are some really good EU books set in time period of the prequels, though, and Qui-Gon and Anakin are made into proper characters. I'm not disparaging your choice (I personally couldn't have watched The Last Airbender again without first excising Korra from my brain), I'm just pointing out that you're giving up a lot more than a few films.

The only Star Wars books I read was the Thrawn Trilogy, or whatever it's called. It was supposed to be episodes 7, 8, and 9, before JJ Abrams came in an did his own thing. And that was an amazingly fun read, but in the end I should not expect to supplement any of the Star Wars movies with any other media to "sell" the story. That shouldn't be necessary, the movies should stand on their own. And most of them do.
 
I rewatched a bunch of episode 1 last night. Crazy movie.
