The two ultimate combinations for people who can't read carefully
I'd choose super horses for fun
The absolute best horse army ever!
Mine would be
UB - Mayan Pyramid
UU - Pathfinders
UA - Babylonian Ingenuity or Korean one
I generally play Terra for a relatively even playing field for various advantages.
For my builder playstyle the Incan UA is just sooo tasty - even with a dearth of hills.
There are so many good units, but I think I'd go with Pathfinder and Conquistador.
(I love Terrace Farms but you can't count on lots of hills.)

Great Andean Road, Keshiks, Ducal Stables
Patriache of Canstantinople(or whatever), Pictish Warrior, Burial Tomb/Stele
City of Lights, Jaguar, Coffee House
Siberian Riches(Arabian UA I Think but that one), Longbowmen, Kashab
Scholars of the Jade, Prachina(Brazilian UU), Candi
Wayfinding, Pathfinder, Dromon/Ship of the Line
Indian UA, Mehali Safari( Ethiopian UU), Polders
Sun Never Sets, Ship of the Line, Sea Beggar
Zulu UA, Longbowmen, Keshik
UB-Mayan Pyramid or Ethiopian Stele
UU-Shoshone Pathfinder or English Longbowman
Pathfinder, Stele, Celt UA
The Byzantium UA is probably stronger, but I just have to wonder how fast you can get a religion using this!
Shoshone UA, Pathfinder, and Paper Maker. I love the Shoshone stuff in combination, but the Comanche Riders suck. Meanwhile the Paper Maker eases the Gold issues early on...
Songhai UA River Warlord, Keseks, and Khans
How about Venice UA + Hanse + whatever?
Maxed out; Babylon UA, Mongol UU and Arabian UB.
For fun/What I would like to play; Shoshone UA, Poland UU and French UI.
Start Bias- Coastal mountains with at least 5 hills lol
My personal one though would be:
I hate playing games that I get a good NW but I'm not Spain
This gives a little bit of everything
Imagine Shoshone's ability to land grab combined with Spain's ability to get double benefits from Natural Wonders.
Or for giant cities: Aztec UB & Ghandi's UA.
Germany as is + B17 = resistance is futile.
SoTL instead for island maps, Minuteman would also be nice.
ya know, there's a bunch to choose from that would just make things silly.
Highly map dependent though.
Spain UA + Pathfinder + Terrace Farm. Depending on the map, would break the game. Pathfinder seems to boost your early game ahead by 20-30 turns. Throw on GBR start with a few mountain tiles and GG.
Zulu UA + Keshik + Burial Tomb. Tomb may seem like an odd choice, but religion is a huge potential source of happiness and Tomb has +2 thrown on as well. UA + Keshik for dominating everything and religious dominance for the smilies to back it up.
Imagine this in one civ:
Mongol Terror, Scourge of God, Keshik, Khan, Winged Hussar, Ducal Stables.
Most terrifying army EVER. EVER.
Don't forget the elephants
darius ua, battering ram, and jaguars.
three moves city breaker on turn 60ish using liberty golden age, i'll have a comfortable lead by turn 100 or so.
