To the people who suggested "ma'am", do you also use "sir" when talking to guys?

(I'm vaguely aware that there's a US vs UK difference here - in the UK, terms like sir/madam are usually only used in particular situations, such as to a customer, and not for simple everyday politeness. Do people use these terms just for strangers, or for anyone?)

Personally, I don't use "sir" too often. I treat ladies with more deference than I do my fellow males. That said, I do refer to men substantially older than me as "sir" if I don't know them.
