I don't really eat many sandwiches (at stores) due to that reason :/. Of course I'll answer obligatory falafel pita stuff, but no (US) chains really sell those.
I started being a vegetarian a few days ago, and I already have an issue. What are some vegetarian sandwich ideas? I just went to a sandwich store today and didn't know what to order...
If you're looking to make a sandwich on your own, you can just use imitation meat - there's plenty in the frozen section to choose from. You can also just have sandwiches with only veggies, although that tends to be... bland.
If you're looking for fast food sandwiches or deli stuff, Subway does offer a vegetarian sandwich (you can call it either the veggie patty or veggie max or something) which is pretty tasty. You might have to tell the person there to use different gloves or knives, if you want to make sure your sandwich isn't "contaminated". Burger King also sells veggie burgers in the US, but some people don't like those or will avoid them since they don't like the meat association that fast food chains tend to have.
Some grocery stores and convenience stores and other non-restaurant places may offer stuff like egg salad sandwiches, but otherwise it's true your options are more limited than if you still ate meat. It's not impossible, though; it just takes more work to find stuff and accepting the fact your options might be limited.

Beans, spices, and various sauces/pastes don't count as "veggies [vegetables]".
But yeah, you're right. Sauces and spices can make a huge difference. Sometimes, especially if you don't have imitation meat with you (or if you don't like it), you have to be creative if you're a vegetarian and more so if you're a vegan.
I make a sandwich spread out of chickpeas. Just mash a can of chickpeas with a fork, then add minced shallots or onion, pickles, celery, a splash of pickle juice, mustard and a little mayo--basically like you would with egg salad. It's really good seasoned with Black Indian Salt, if you're feeling inspired.
