I do the same somewhat often, but I find that it usually ends up into a near endless loop of A's whenever any sort of geography category is used.

We mostly played the game using well-known people picking up the first letter of the surname to use as the first letter of the last name. So George Bush -> Barack Obama -> Omar Sharif -> Stan Lee -> Lewis Carroll -> Carole King -> ...

Names where both first and last name started with the same letter were forbidden.
