Given that musical instrument didn't exist here first or centuries ago, the greek is just using the english term with a greek ending, ie 'saxophonistas' (for male; female is 'saxophonistria' i suppose), although i wouldn't be surprised if there is some more official/high brow term used in orchestras, but i don't know of it :D

Not sure what the etymology of "sax" is. -phone obviously is from phone/ φωνή (voice).
 
Apparently named after its creator, Adolphe Sax.
