https://en.wikipedia.org/wiki/Member_states_of_UNESCO yep, exactly that.
The 3 yellow ones are the only "observers" to the UNESCO, while all green ones are full members.
The others are in different categories because they're not their own state and are either associated with a full state or have a separate committee.

So yeah, not the most interesting map :/.

I do not think that is a bad map. It begs the question why the worlds premier cultural exporter only has observer status. And the answer is right there: " The United States and Israel were members, but left on 31 December 2018 asserting that the organization had an anti-Israel bias". Everything has to be politics doesn't it?

I wonder if we can negotiate disbanding NATO and reviving the ABM treaty with Israel and how much they would want for it?

Drug manufacture immediately springs to mind.

Would you expect that some of the grey ones are actually in one of the categories?

No, all the other countries (also those which are not shown) are not in one of the categories (provided, I did not mess up). Some of them could be in a separate category, though.

The map is not related to drug manufacture.

Preferred destinations of "illegal" migrants into Europe.

Can we assume that the map is showing some quantity of something, and from least to most: white, pink, purple?

Is it worth thinking about Denmark being purple and Greenland being gray?

Is it somewhat linked to the EU and associated partners?

(that comes closest to the map, but Luxemburg missing is an issue ;yes, also Ireland, obviously)

It is not about the EU, but you are heading in the right direction.

Is it worth thinking about Denmark being purple and Greenland being gray?

No, I don't think that will give you hints. If you consider Greenland a part of Denmark, it could be colored purple. In fact, I have seen a map of this with Greenland colored and also a map where it was not colored.
