They don't. The Turk renamed Byzantines to Romans in his SoI Plus modmod, and that's where the screenshots come from.

Nope, only the Byzantines were renamed IIRC.

Khanate of Khiva is one of the four possible names for the Uzbeks (respawned Khwarezmids). The other three names are Shaybanid Empire, Khanate of Bukhara and Khanate of Kokand, depending on the capital/extent :) Bukhara is most common though.

Roman citizens i.e. inhabitants of Byzantine Empire, and Latins is what they called Catholics, esp. Italians. It's a historical event, but I will reword the sentence if it's confusing.

As for the order of events, yeah, the massacre happened before the 4th crusade, and is considered as one of the reasons the crusade went the way it went.
 
Wow, I've often seen Yemen taking an odd interest in Iraq but they've never made it that far in my games.

I've noticed that it seems that the Mongols have been nerfed, as I see the Seljuks, Sultanate of Rum (less though) and more surprisingly the Khwarezmids being able to with stand the Mongol Horde. Edead did you change anything? Because it sucks to see that they are living much longer than they should, with only a small scratch coming from the Mongols, who in my few games, have only taken 1-2 cities from them :(
 
in my most recent game (Seljuks) the Mongols whiped out Khwarezmids like it was nothing, and Georgia only survived because i had an army of heavy Horse archers there, that had only just beaten them into submissiveness ... and i still managed to lose a good handfull of cities before i managed to turn the tide by shuffling my Heavy Horse Archers the right places, now defending each city in danger with 8-10 HHA's, half of them born with 3 promos (Barraks, Stable, Theocracy, Settled GG, and whatever the wonder that gives +1 is) which goes into Combat I+II and Skirmish
