Dharani is a better than galley, because it can carry two units and better than caravel because it can carry units of every kind. Shamurai is just a better heavy swordman, so Dharani wins.

UB:
Shangam vs Kaizen Plant:
In v1.11 Kaizen plant just gives +10% in production, while Shangam gives one extra artist slot. Shangam would win, but the SVN Kaizen plant with one free engineer and one scientist slot wins.

UP:
Thalassocracy vs Honor:
Both are good UPs. Thalassocracy seems OP, while Honor is useless in times of peace.
So Thalassocracy wins, because it can be used in both war and peace.

UHC1:
3000+2000 vs 18000:
Tamil goal is more interesting, but it is a matter of luck. So it goes to Japan.

UHC2:
Chola empire vs the Greater empire of Japan:
Both empires existed for a sort period of time. The building of both of them is challenging, in the Chola you have little time, in the Greater you have stability problems. However, the Greater Empire of Japan is greater IMO.

Offtopic: Suprisingly the first two UHCs are extremely comparable.
