I'd be the artificial gravity plumbing technician. I'd make sure that artificial gravity is appropriately distributed to all the living quarters of the space ships.

(the point being that artificial gravity or any gravity cannot be distributed as if through pipes. Therefore my "mundane" line of business in the SW world would be equally mysterious as that of the Jedi).

I don't feel like picking sides or being powerless like that. I think I'll opt for Grey Jedi or follower of the Potentium philosophy. I wouldn't be evil, but wouldn't recognize the authority of the Jedi Council or the labyrinthine Jedi Code. I'd avoid the corruptions associated with the dark side, but not let that stop me from using the cooler, traditionally Sith powers so long as I remained devoid of malice.

Judging by the extended universe canon, the Jedi council tended to take force-sensitive kids and bring them up in the temple, so I wouldn't have much of a choice in the matter..

Sounds to me like this is a question geared to the up and coming MMO. Star Wars: The Old Republic will allow players to be either sith or jedi. Its looking to be a pretty interesting mmo and a lot of people have their eye on.

As for me, I will probably be a non-force user....maybe a bountyhunter or smuggler.

I certainly wouldn't be a Sith, since I want to live. Sith = you get killed by other sith.

The choice between the remaining two would then be decided by how lazy I am feeling.
