What is Your Favorite Vegetable???

...and how do you prepare it.

There are so many out there, and most are very good for you, so what is your favorite one. I am trying to broaden my meal selections to be more healty and I figured given the wide range of people on this board surely some of you know of vegetables I don't, or have favorites I do know of but do not know how to prepare well or what to eat them with.

In my case, I am currently in love with the Turnip.

My aunt made a bowl of mashed turnip for Christmas dinner this past year and I can't get enough of them. I usually make a big bowl of them at least once a week that lasts me three or four meals. Delicous.

3 medium turnips.
Chop off tops and bottoms and carve off rinds
Cube
Boil for 10-15 minutes until soft
Drain and put in bowl with 1/2 stick of butter
Mash in a mixer or with a spoon
Season to taste with salt
Makes enough for four servings.

Broccoli, steamed. Drizzle some butter over it. Delicious.
 
For utility, I like the sweet potato. So much of my culture rotates around the potato, and I'm of the opinion that a sweet potato is many times more nutritious.

I use them in shepherd's pie. I use them to make a baked potato. They get tossed as filler in stews.


My most common vegetable is carrot, because I toss boiled carrots into my smoothies. I try to get about 200 calories of carrot every few days.

Tomato.
You can eat them raw, but I also use them (in the form of tomate sauce) in my pasta recipes.

My favorite is the cucumber. I eat it on everything and with everything, and if you pickle it then it's even better. Probably my favorite way to eat it though is to mix crab meat, diced cucumber and a little ranch dressing and stuff it in a pita pocket.
 
Ooh, good question.

I am the sort of uncultured swine who eats peas. Not mushy ones, mind, just regular ones: shiny little globules of juicy loveliness. Broccoli is also tasty: there's little you can do to ruin broccoli.

Having thought about it for a while, though, my favourite is probably the vegetable that you Yanks call 'bell pepper' and we Limeys just call 'pepper'. They're juicy and flavoursome and they come in all sorts of different colours like a rainbow! And they go on pizzas and in pastas and rice dishes and in soup and casseroles and everywhere! Also they are very satisfying to chop up.

Not a vegetable. Thats fertilizer.

I probably eat more onions/tomatos/potatos/lettuce than anything else; but for the sake of variety, I will offer up one that I like that not many others do.

The beet.

Dont get them very often since no one else likes them at all, but I will eat a whole bowl full myself.

Honorable mention:

Asparagus.
 
Man, how can you all choose? Zucchini, okra, potato, corn, kohlrabi, beans... I could never pick a single fav veggie.
 
Is garlic a vegetable?

Anyways....asparagus with that special sauce...mmmm
