I've just heard on Monday that the opposite of protestant in that case is apparently bourgondisch (no idea how to spell that in English), but that seems to be a Dutch perception.

According to my Dutch book + the wiki article, it actually relates to Burgundy, and is more meant as a French way of living (which again makes sense, I suppose).
