The whole 'play a single character through every quest the game has to offer' concept is lost to me...and once I lost it the games were far more satisfying.
After I did two (three?) playthroughs in Oblivion where I did the "lol do everything including main quest but except for dark brotherhood because thats not my cup of tea" I started doing more focused, "unique" playthroughs to keep things fresh. Right now I'm almost finishing up my Khajiit battlemage (with the Vilja mod for adding RP fun)
As a suggestion...
Pick some quest that you did for the first time late in one of those 'super jack does all trades' playthroughs. Consider how much more fun you may have had experiencing that quest the first time (which by definition you only get to do once) as an appropriate level character.
You may see something that will change your approach to the next ES game and make it far more enjoyable.
If I want to play as a mage, I do. I go do stuff mages would do, like join the mage's guild. If I want to see what the fighter's guild quest line is like I start out as some sort of fighter and join the fighter's guild. I don't approach it as the archmage who had a midlife crisis and became the head of the thieves guild has now had another and is joining the fighters guild as an apprentice, because the game can't really handle that well...surprise.

Would you recommend FTL though? I have been going back and forth between whether or not to get it since it came out, but I just can't seem to make a decision.

I've been in a few hospitals that had obviously been designed this way.
