@Zack, since you never came back, the answer is whatever Mexican driven, Mexican culture based food that I grew up on. It's not heart-ofMexico Mexican, it's definitely not Tex-Mex, but rather some Californian centered Mexican food. That's why I said "it's gotta include burritos".

Tex Mex is not limited to Texas. If you've ever eaten "Mexican food" in the US, it's Tex Mex or close to it. Don't get so hung up on the name.
