Blue is good, red is bad? Or the other way around?
Within a country moving toward more red would be pretty unambiguously good. Between countries there are enough other factors to make red = good, blue = bad a bit simplistic, certainly from the point of view of an average citizen.

Is the new map something to do with renewable energy?
Yes, I have to say that is close enough. % renewable electricity production, from wiki. With legend:

Is this related to meat consumption or livestock in general?
 
I know this one. Its the railroad gauge standards in the world. I must admit, presenting these as a scale could have made for a long game. Nice find ;)

The colours are not in order. I had to keep the legend on the map, but erased it for obvious reasons.
